10 eggs, beaten 1/2lb. shredded pepperjack cheese 16oz. cottage cheese 7oz. can green chilies Make a roux with: 1/4 c. butter 1/2 c. flour 1 tsp. baking powder 1 1/2 tsp. salt Shred cheese and spread into a sprayed 9x13 pan. Beat eggs, add cottage cheese, green chilies and roux and pour over cheese. Bake @350 for 35-45 min. until egg is set in center and edges are brown.

One 16-inch medium-crust pizza or two 12-inch thin-crust pizzas or four 8-inch thin-crust pizzas 1 tablespoon active dry yeast 1 cup warm (105-115 degrees) water 2 tablespoons olive oil 1 tablespoon honey 1⁄4 teaspoon salt 3 to 4 cups all-purpose flour or half all-purpose and half whole wheat (See Note) Mix the yeast and water in a small bowl, cover, and let stand until foamy, 5 to 10 minutes. Mix the oil, honey, salt, and yeast mixture in a large mixing bowl. If using a food processor, add 1 cup of flour at a time, up to 3 cups, mixing well after each addition. You may have to stir in the third cup of flour by hand, depending on your machine. Or mix in all 3 cups of flour by hand with a wooden spoon. ...

Make-Ahead Muffin Melts (Pioneer Woman)

12 whole Hard-boiled Eggs, Peeled And Chopped 2 cups Grated Cheddar Cheese 1 cup (Real) Mayonnaise 12 slices Bacon, Fried And Crumbled 1 Tablespoon (heaping) Dijon Mustard ½ teaspoons Garlic Powder 3 dashes Worcestershire Sauce 6 whole English Muffins Combine eggs with all other ingredients. Fold together gently. Cover and store in the fridge overnight. Spread on English muffin halves, then broil for 3 to 5 minutes or until hot and bubbly. (Don’t set them too close to the heating element.) Serve immediately!

¼ lb. jimmy dean sausage ¼ green pepper, diced 4 eggs 4-8” flour tortillas shredded cheddar cheese salsa Cook the sausage until brown. Pour the scrambled eggs onto the griddle and mix the eggs with the sausage and green peppers. Salt and pepper and stir fry until eggs are cooked. Microwave tortillas for 20-30 seconds to soften, then fill with ¼ of the egg mixture and top with shredded cheddar cheese.
