Salsa Chicken

1 lb. chicken breast, cut into strips
2 Tbs. oil
1 pkg. taco seasoning
1 (14 oz.) can diced tomatoes
1/3 c. apricot or peach preserves
Toss chicken strips in taco seasoning then saute in oil over medium heat for 5-7 minutes (until done). Stir in tomato and preserves. Cover and simmer 10 minutes. Serve over rice.
